Waste Not, Want Not

A recent government sponsored report by WRAP (Waste and Resources Action Programme) indicates that hotels, pubs, restaurants and quick service restaurants produce over 3.4 million tonnes (mt) of mixed waste (typically food, glass, paper and card) every year, of which 1.5 mt is thrown away, mainly to landfill. Around £1 billion a year is spent on purchasing 600,000 tonnes of food which is then wasted. With government in Scotland expected to issue …
