Simon Christey-French – Winning Chef 2007
Simon Christey-French of The Square was winner of the Young Chef 2007 title.
“It’s amazing, I’m overwhelmed,” said Simon, after the awards ceremony.
This was Simon’s second attempt at the competition. He entered in 2005 and got through to the regional finals. “I was still a nervous wreck,” he said, “but once I’d got through to the final I felt a lot more relaxed and gave it all I could.”
Bruce Poole of Chez Bruce, Chair of Chef Judges praised Simon’s cooking. “There is always a lot involved in selecting the winning chef. Contestants have to be both technically and conceptually strong. Simon Christey-French was a clear winner, he played to his strengths and his dishes were clean and clear, not over-complicated.”

Matthew Mawtus – Winning Waiter 2007
Matthew Mawtus from L’Etranger, previously at Gordon Ramsay at Claridges, scooped the Young Waiter title and was stunned by his win.
“I had no idea I would get so far. Getting through to the finals surpassed my expectations,” he said. “I was nervous at the start, but once I’d got into it I relaxed. My guests were very receptive. I had one who had a nut allergy, so I had to deal with that and she was very receptive to my suggestions.”
Matthew is from Banchory near Aberdeen and worked for nearly three years at the Glasgow Hilton, completing a degree in hospitality, before moving to London.
Waiter judge Stephen Mannock of Darlington College, said: “This was the tightest competition we’ve seen so far. The difference between contestants was very small. Matthew scored highly on his technical ability, his set-up, service, skills and personality.”
