The primary audience for this leaflet which is currently in draft form is the small & medium enterprise, but the key messages for this could be applied to large businesses.
Detailed allergen guidance on non-prepacked provisions (i.e., meals sold in food service) will be provided in a separate guidance document and within the FSA allergy e-learning module. The purpose of this leaflet is to be an aide memoire to reinforce key messages from these materials and to help enforcement officers advise businesses while on an inspection. There will be a section on food allergies in the Industry Guide to Good Hygiene Practice.
