Rob Allum, 34, has returned to the newly refurbished Crowne Plaza Felbridge in East Grinstead to take up the position of Head Chef following four years’ absence working at top hotels in the Middle East.
Bringing with him a wealth of culinary expertise, Rob has created an exciting new menu for guests dining in the hotel’s stylish Bay Tree restaurant. His dishes reflect the wonderful authentic flavours, which he experienced while working alongside chefs from over 60 countries at the Sixth Senses Resort in Oman and Grand Hyatt in Dubai.
Before travelling Rob spent a year at the Felbridge Hotel and Spa, as the Crowne Plaza was then called, and was previously employed by Exclusive Hotels.
Special dishes on his new menu with an international twist include salmon sashimi as a starter and Arabian spiced lamb shoulder served with cous cous and stuffed aubergine for mains.
There are small plates to share and whet the appetite such as grilled flatbread with hummus, crispy Cajun whitebait and marinated olives, while starters also include duck rillette with onion jam and tempura king prawns. For mains there are seven dishes to choose from such as pan roasted sea bass, crisp chicken with parmesan and Parma ham and a wild mushroom risotto as well as classic steaks cooked to your preference. And if you have space for a pudding there are tempting delights such as chocolate praline mousse cake and a strawberry and balsamic Eton mess plus a selection of ice creams and British cheeses.
